Depends what you've already seen... The Godfather, Pulp Fiction and Memento would be another 3 I'd recommend.

The Good, the Bad, and the Ugly - Awesome film. But watch 'A Fistful of Dollars' and 'For a Few Dollars More' first.
Resevoir dogs - Yesss.
Lost in translation - Mehhh, nothing happens.
Apocalypse Now - Yep, great film.
Lawrence of Arabia - Not seen but want to. Same for the three below!
Clockwork Orange

Taxi Driver
The Big Lebowski - A Coen Brothers classic. Also try and see 'Burn After Reading'. Very funny stuff.

Burn after reading? God no, that is a bad movie. I would suggest Snatch and Lock Stock & Two Smoking Barrels, two great movies directed by Guy Ritchie. _________________

Quite an awesome list, Presto! I wouldn't let any of those movies (Or any of the suggestions) go unseen so don't even consider it!
Since you're already going for Hero and CTHD then I'll wholeheartedly suggest you give House of Flying Daggers a shot, also you'll find more exciting Schwarzenegger movies in True Lies (Speaking of James Cameron you should definitely check out The Abyss, The Terminator flicks, and Aliens providing you've given the first one a shot) and Eraser (You'll also find considerably sillier Schwarzenegger movies in Kindergarten Cop and Junior). And if you enjoy the Fistful of Dollars saga, Leone's Once Upon a Time in the West is THE spaghetti western you cannot miss!
Personal favourites that I consider will definitely stand out as unique are:
The 36th Chamber of Shaolin
The Royal Tenenbaums
Boogie Nights
Chinatown
Quiz Show
Barry Lyndon
These are all good fun and not very dense (If you like them that is)! _________________ TUB THREAD.

It depends on your taste I suppose, I quite liked the utter randomness of some of the scenes, but I think you either love Ron Burgundy, or you hate him for being a douche :P
